| 8oz self raising flour |
| 4oz butter |
| 4oz soft light brown sugar |
| 3oz currants |
| 1oz chopped glacé cherries |
| 1oz chopped candied peel |
| Pinch of nutmeg |
| Pinch of salt |
| 1 egg |
| A little milk |
| Step | Description |
|---|---|
| 1 | Sift the flour and salt and then rub in the butter. |
| 2 | Add the sugar, currants, cherries, peel and nutmeg. |
| 3 | Beat up the egg with a little milk and add to the dry ingredients. |
| 4 | Mix with a fork to a stiff mixture. |
| 5 | Grease a baking tray and place the mixture in rough heaps. |
| 6 | Bake for 15 minutes in a pre-heated oven at 400ºF/200ºC/Gas mark 6 in the middle shelf. |
| 7 | Perfect served with a pot of Irish tea! |
