SuperValu Chocolate and Cognac Souffle by Clodagh McKenna

This deliciously simple yet luscious chocolate desert will make the perfect end to a romantic meal for two and the perfect beginning to your romantic evening!
Serves: 2
Preparation time: 20 minutes,
Chilling time: 15-20 minutes

Ingredients
100g SuperValu Supreme dark chocolate
1 dsp of SuperValu cream
2 eggs, separated
40g SuperValu caster sugar
SuperValu butter, to grease
1 tbsps cognac


Step Description
1 Melt the chocolate and cream in a bowl set over a pan of simmering water. Once melted remove from the heat and add the egg yolks, sugar and cognac to the chocolate and mix well.
2 Meanwhile, place the egg whites into a large bowl and whisk to form stiff peaks. Then gently fold the egg whites into the chocolate mixture.
3 Grease 2 ramekin dishes and pour the chocolate mixture in. Place on a baking tray and cook in a pre-heated oven at 220°C for 12-15 minutes, or until well risen.

Clodagh’s Top Tip:


You can substitute the cognac for rum, coffee (espresso) or a liquor of your choice. You could also add orange rind, vanilla essence, cinnamon, chili powder or ground cardamom instead.
