Summer Insalata Riso
Serves 4
Preparation time: 10 minutes
Cooking time: 10-12 minutes

Ingredients
100g SuperValu Basmati Rice
50g SuperValu garden peas
50g SuperValu Sweetcorn
100g SuperValu Supreme Cherry Tomatoes (halved)
Hard boiled SuperValu Free Range Eggs
Juice of 1 lemon
SuperValu Supreme Extra Virgin Olive Oil
SuperValu Cooks’ Ingredients Sea Salt and freshly ground Black Pepper


Step Description
1 Firstly cook the rice in accordance with the pack instructions and leave to cool.
2 When cooled, place the rice in a large bowl and mix in the sweetcorn, peas and halved cherry tomatoes.
3 Cut the hardboiled eggs into quarters, then half again and toss into the rice.
4 Add in a good dollop of extra virgin olive oil and the lemon juice.
5 Season with the salt and pepper and mix well.

Clodagh’s Top Tip:


You can also use wild rice instead of Basmati rice. This salad makes a really nutritious lunch, so don’t forget to make some extra and pop it in a lunch box to bring to work or for the kids to bring to school!
