| 100g SuperValu Basmati Rice |
| 50g SuperValu garden peas |
| 50g SuperValu Sweetcorn |
| 100g SuperValu Supreme Cherry Tomatoes (halved) |
| Hard boiled SuperValu Free Range Eggs |
| Juice of 1 lemon |
| SuperValu Supreme Extra Virgin Olive Oil |
| SuperValu Cooks’ Ingredients Sea Salt and freshly ground Black Pepper |
| Step | Description |

| 1 | Firstly cook the rice in accordance with the pack instructions and leave to cool. |
| 2 | When cooled, place the rice in a large bowl and mix in the sweetcorn, peas and halved cherry tomatoes. |
| 3 | Cut the hardboiled eggs into quarters, then half again and toss into the rice. |
| 4 | Add in a good dollop of extra virgin olive oil and the lemon juice. |
| 5 | Season with the salt and pepper and mix well. |
