Smoked Gubbeen Bacon and Turnip Soup by Clodagh McKenna

This soup makes a delicious starter, or is a great lunch on its own.
Serves 6
Preparation time: 15 minutes
Cooking time: 20 - 30 minutes

Ingredients
50g SuperValu Butter
100g Gubbeen Smoked Streaky Bacon, or lardons, diced
100g potatoes, peeled and diced
2 garlic cloves, crushed
100g onions, chopped
600ml/1pint hot stock (chicken or vegetable)
300g turnips, peeled and chopped
2 tbsp finely chopped flat leaf parsley

Step Description
1 Place a heavy-bottomed saucepan over a medium heat. Add the butter and when it has melted, stir in the smoked bacon and leave for a few minutes until it becomes crispy.
2 Then add in the turnips and potatoes before adding the garlic and onions. Cover with a lid and cook for 10 minutes.
3 Add the stock and bring to the boil before reducing the heat and cooking for about 5 minutes or until all the vegetables are tender.
4 Stir the parsley through, season to taste with salt and pepper and serve with buttered chunky bread.

Clodagh’s Top Tip:


You can also blend this soup in a food processor for a smooth consistency. If you are a vegetarian or just don’t like smoked bacon add in a tablespoon of medium curry powder when you are sweating the vegetables for a delicious curried flavour.
