Patrick Doherty’s Monkey Bread

Yummy and scrummy when it’s in my tummy!
Makes 1 loaf
Preparation time: 20 - 30 minutes
Cooking time: 1 hour

Ingredients
4 oz butter
8 oz self raising flour
3 oz brown sugar
2 oz raisins
2 eggs
3 tbsp honey
4 ripe bananas


Step Description
1 Rub the butter and flour together in a large mixing bowl
2 Add the sugar and raisins
3 Add the eggs and the honey and mix well
4 Mash the bananas in a separate bowl, and then add to the mixture
5 Give it a good stir for a few minutes
6 Grease a loaf tin and pour in the mixture
7 Bake in a preheated oven at 350˚ F/ 180˚ C/ Gas 4 for about 1 hour
