Noreen Harrington’s Blue Cheese, Pear and Bacon

I serve this as a breakfast in our guesthouse. It’s my signature dish and guests love it!
Serves 1
Preparation time: 5 minutes
Cooking time: 5 minutes

Ingredients
2 slices of ciabatta bread
1 sweet ripe pear
2 slices of Cashel Blue cheese (from a block)
2 streaky rashers of bacon
Sweet chutney to serve


Step Description
1 Toast the ciabatta lightly.
2 Slice the pear and place on top of the toast. Cover with Cashel Blue cheese.
3 Pop under a preheated grill until the cheese is bubbling, taking care not to burn.
4 Grill the rashers until crisp and place these on top of the cheese.
5 Serve with sweet chutney.
