moked Salmon, Goat’s Cheese and Caper Rolls by Clodagh McKenna

These are wonderful as a canapé for parties as they are easy to assemble and you can make them ahead of time and store them in the fridge. They are also great as a starter.

Makes 16 canapes. Preparation time: 10 minutes
Ingredients
8 slices of SuperValu Smoked Salmon, split in half
100g soft Goat’s cheese
24 capers (3 per canapé)
SuperValu Cooks’ Ingredients Sea Salt & Ground Black Pepper


Step Description
1 With a dessertspoon, scoop out a little soft Goat’s cheese and place the Goat’s cheese on the smoked salmon
2 Sprinkle on 3 capers season with salt and pepper and wrap
3 Continue and place all the smoked salmon on a serving dish

Clodagh’s Top Tip:


As an alternative to smoked salmon, roasted red peppers are delicious in this recipe just make sure to replace the capers with fresh rocket or basil.
