Easy Peasy Fruit Muffins by Clodagh McKenna

This is a very simple muffin recipe and you can subsitute the dried fruits and nuts with whatever combinations you like!
Serves: 12
Preparation time: 15 minutes,
Chilling time: 20 minutes

Ingredients
400g SuperValu Plain Flour
85g SuperValu Butter
150g SuperValu Caster Sugar
2 SuperValu Large Free Range Eggs
280ml buttermilk
1 tbsp baking powder
50g SuperValu Goodness Walnuts or SuperValu Goodness Almonds, chopped finely
200g SuperValu Mixed Fruits, finely chopped


Step Description
1 In a large bowl cream together the butter and sugar and then stir in the buttermilk followed by the 2 eggs and mix well.
2 Slowly mix in the flour and baking powder.
3 When the mixture is well creamed together fold in the dried fruit and nuts.
4 Fill your muffin cases about three quarters of the way up and place in a pre-heated oven at 200°C for 20 minutes.

Clodagh’s Top Tip:


For Banana and Walnut Muffins: Substitue the dried fruits with 2 mashed ripe bananas, 50g walnuts and 1 teaspoon of cinnamon wholemeal flour and 150g wheat bran and use brown sugar instead of caster sugar
