Classic Chocolate Mousse by Clodagh McKenna

I love making these when I have friends coming around for dinner as they taste fantastic!

Serves: 4
Preparation time: 20 minutes,
Chilling time: 3 hours

Ingredients
150g dark chocolate (39% Cocoa e.g. Bournville)
70g butter
3 eggs


Step Description
1 Break the chocolate up into small pieces and melt in a glass bowl that is suspended over a saucepan of simmering water.
2 With the wooden spoon stir the chocolate until it is melted into a silky smooth thick liquid.
3 Then remove the glass bowl from on top of saucepan and stir in the butter.
4 Separate your eggs, putting the yolks and whites in separate bowls.
5 Add the egg yolks into the chocolate mixture and slowly stir.
6 In the separate bowl beat the egg whites until you get a stiff peak.
7 Fold the stiff egg whites into the chocolate mixture and pour the mousse into a large serving bowl or individual small glasses.
8 Place in a fridge to chill for 3 hours to allow the mousse to set.
9 Serve garnished with your favourite summer berries.
10 Remember: Mousse contains raw egg so be careful, particularly for pregnant women and young children

Enjoy with a dessert wine such as Cookoothama Botrytis Semillon (375ml €15.99). Layers of rich honey, orange and cinnamon with a mouthwatering fresh citrus twist on the finish. A really beautiful wine, enjoyed very well chilled.
