Break the chocolate up into small pieces and melt in a glass bowl that is suspended over a saucepan of simmering water. |

With the wooden spoon stir the chocolate until it is melted into a silky smooth thick liquid. |

Then remove the glass bowl from on top of saucepan and stir in the butter. |

Separate your eggs, putting the yolks and whites in separate bowls. |

Add the egg yolks into the chocolate mixture and slowly stir. |

In the separate bowl beat the egg whites until you get a stiff peak. |

Fold the stiff egg whites into the chocolate mixture and pour the mousse into a large serving bowl or individual small glasses. |

Place in a fridge to chill for 3 hours to allow the mousse to set. |

Serve garnished with your favourite summer berries. |
